Redbirds take barbecue into their own hands

A long-standing Memphis Redbirds tradition is being incorporated into a shack behind right field. The Redbirds have recently completed the BBQ Shack that is responsible for supplying AutoZone Park with all of its barbecue needs during games. “We’ll have 15 pork shoulders or 300 pounds, we’d get 140 pounds of meat out of it,” said Norman Taylor, the chef in charge of the barbecue shack. “Brisket is about 200 pounds.” Taylor says the smoker is constantly going, either to prep for a day’s…
